This week’s meal planning is going to be a bit hit-and-miss. I’m thinking about next week already, and all the stuff I have to do. I’m driving down to my parents’ house next weekend, firstly to see my mum after her op and secondly to act as Father Christmas delivering the family presents and collecting ours, so I have to start preparing the Christmas stuff this week.
Yesterday, rather than do a big roast dinner when I have at least two to do next week, I did ham, egg and chips for the three of us. The boy is rather partial to a fried egg and also a gammon steak so he was happy. I had pineapple on mine as I’m not a huge fan of fried eggs.
The other meals I have planned are:
- Slow cooker lasagne (recipe courtesy of Cafe Bebe)
- Chicken enchiladas (just an Old El Paso kit)
- Scampi and chips
- Mushroom risotto
- Pizza Express pizzas
I think we’ll have the pizzas on Thursday as that’s the night of my employer’s children’s Christmas party which we’re taking the boy to, so we’ll eat these when we get home.
So that’s my selection of meals up to Friday night, then the boys are fending for themselves and I will probably be doing the same at my parents’ house! And next week it’s all about the turkey.
